- 2 medium sweet potatoes peeled & diced
- 1 can 15 oz black beans, drained & rinsed
- 1 can 14.5 oz diced tomatoes
- 1 small onion chopped
- 3 cloves garlic minced
- 2 cups vegetable broth
- 1 tbsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp chipotle powder optional
- 1 tbsp olive oil
- 1 tbsp lime juice
- Salt & black pepper to taste
- Fresh cilantro avocado, or cheese for garnish (optional)
Sauté aromatics: Heat olive oil in a pot, then cook onions and garlic until soft.
Toast spices: Stir in chili powder, cumin, smoked paprika, and chipotle powder. Cook for 1 minute.
Add ingredients: Pour in diced tomatoes and vegetable broth, then add sweet potatoes. Simmer for 20-25 minutes.
Stir in black beans: Let cook for 5 more minutes.
Final touches: Stir in lime juice, season with salt & pepper, and garnish as desired.
