Ingredients
  

  • 2 medium sweet potatoes peeled & diced
  • 1 can 15 oz black beans, drained & rinsed
  • 1 can 14.5 oz diced tomatoes
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 2 cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp chipotle powder optional
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • Salt & black pepper to taste
  • Fresh cilantro avocado, or cheese for garnish (optional)

Instructions
 

  • Sauté aromatics: Heat olive oil in a pot, then cook onions and garlic until soft.
  • Toast spices: Stir in chili powder, cumin, smoked paprika, and chipotle powder. Cook for 1 minute.
  • Add ingredients: Pour in diced tomatoes and vegetable broth, then add sweet potatoes. Simmer for 20-25 minutes.
  • Stir in black beans: Let cook for 5 more minutes.
  • Final touches: Stir in lime juice, season with salt & pepper, and garnish as desired.

Notes

  • For extra protein, add quinoa, tofu, or lentils.
  • Adjust spice levels to taste—jalapeños or extra chipotle powder for heat, or mild chili powder for a less spicy version.
