Ingredients
  

  • 4 bagels plain, whole wheat, or everything
  • 2 large eggs
  • 6 tablespoons heavy cream
  • 1/4 cup shredded cheddar cheese
  • 4 slices cooked bacon chopped
  • 1/4 cup sautéed spinach or bell peppers
  • Salt and pepper to taste
  • Optional: chives for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Slice a thin layer off the top of each bagel or press down the center to create a cavity.
  • In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
  • Stir in the cooked bacon, sautéed vegetables, and shredded cheese.
  • Spoon the quiche filling evenly into each bagel cavity.
  • Place stuffed bagels on a lined baking sheet.
  • Bake for 15–18 minutes, or until the filling is set and slightly golden.
  • Let cool for a few minutes before serving. Garnish with chopped chives if desired!

Notes

  • Pre-cook any vegetables to prevent watery fillings.
  • Customize fillings with your favorites: sausage, mushrooms, feta, etc.
  • For easier handling, use slightly stale bagels — they hold their shape better.
  • Bagels can be prepared ahead and baked fresh the next day.
