Ingredients
  

  • 1 large English cucumber thinly sliced
  • 2 medium Roma or grape tomatoes chopped
  • 1 small red onion thinly sliced
  • ¼ cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or sugar, to taste
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and black pepper to taste
  • Optional: chopped parsley basil, or feta cheese

Instructions
 

  • Slice cucumbers, tomatoes, and onions; place in a large bowl.
  • In a separate bowl, whisk vinegar, olive oil, honey, oregano, salt, and pepper.
  • Pour dressing over vegetables and toss gently to coat.
  • Cover and refrigerate for at least 30 minutes to marinate.
  • Stir before serving; garnish with herbs or cheese if desired.

Notes

  • For a spicier version, add red pepper flakes or jalapeño.
  • Marinating overnight deepens flavor.
  • Use lemon juice instead of vinegar for a citrusy twist.
  • Best enjoyed within 2–3 days.
