- 1 large English cucumber thinly sliced
- 2 medium Roma or grape tomatoes chopped
- 1 small red onion thinly sliced
- ¼ cup apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey or sugar, to taste
- 1 teaspoon dried oregano or Italian seasoning
- Salt and black pepper to taste
- Optional: chopped parsley basil, or feta cheese
Slice cucumbers, tomatoes, and onions; place in a large bowl.
In a separate bowl, whisk vinegar, olive oil, honey, oregano, salt, and pepper.
Pour dressing over vegetables and toss gently to coat.
