- 1 cup cottage cheese full-fat preferred for creaminess
- 1 –2 garlic cloves
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese optional
- 1 tbsp lemon juice
- Salt & pepper to taste
- Optional: fresh basil spinach, chili flakes, or nutritional yeast
Add all ingredients to a blender or food processor.
Blend for 30–60 seconds until completely smooth.
Transfer to a saucepan and warm over low heat—do not boil.
Toss with cooked pasta and garnish with fresh herbs or cheese if desired.
