- Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 cup fresh strawberries, diced
- 1 tsp vanilla extract
- 1 tsp lemon zest
- Wrapping:
- 12 eggroll wrappers
- Water for sealing
- Optional Toppings:
- Powdered sugar
- Chocolate ganache or berry compote for dipping
Instructions
- Mix cream cheese, sugar, and vanilla until smooth.
- Fold in diced strawberries and lemon zest. Chill for 30 minutes.
- Spoon filling into the center of each wrapper. Fold and seal with water.
- Fry in oil at 350°F (175°C) until golden, or bake at 375°F (190°C) for 12–15 minutes.
- Dust with powdered sugar and serve with dipping sauces.
Notes
- For a healthier option, bake or air-fry the eggrolls.
- Can be frozen before cooking and fried directly from frozen.
