Ingredients
– 1 pound dried black-eyed peas (soaked overnight)
– 1 smoked ham hock or smoked turkey leg
– 1 onion, diced
– 2 cloves garlic, minced
– 4 cups chicken stock
– 1 tsp salt
– 1 tsp black pepper
– 1 bay leaf
– Optional: 1 tsp smoked paprika, hot sauce for serving
Instructions
1. Soak black-eyed peas overnight, then drain and rinse.
2. In a pot, sauté onion and garlic until fragrant.
3. Add smoked ham hock and cook for 2 minutes.
4. Stir in peas, chicken stock, bay leaf, salt, and pepper.
5. Simmer for 1.5–2 hours until peas are tender.
6. Shred ham hock meat, discard bones, and return meat to the pot.
7. Serve hot, garnished with parsley or hot sauce.
Notes
– For vegan/vegetarian options, replace ham hock with smoked paprika or liquid smoke.
