Description

A hearty and easy-to-make casserole combining ground beef, potatoes, beans, and cheese, cooked to perfection in a slow cooker. Perfect for family dinners or meal prepping.


Ingredients

  • 1 lb ground beef (or turkey)
  • 3 large potatoes, sliced
  • 2 cans kidney beans, undrained
  • 1 can diced tomatoes (15 oz)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 ½ cups shredded cheddar cheese
  • 1 tsp Italian seasoning
  • ½ tsp dried oregano
  • 1 tsp salt
  • ¼ tsp cracked black pepper
  • Optional: chili powder, green chiles, corn

Instructions

  • Slice the potatoes evenly and brown the ground beef in a skillet. Drain excess fat.
  • In a slow cooker, layer the potatoes, ground beef, beans, diced tomatoes, and cream of chicken soup. Sprinkle with seasonings.
  • Cover and cook on low for 8 hours or high for 4 hours.
  • Sprinkle shredded cheddar cheese on top and cook for an additional 10 minutes until melted.
  • Serve warm and enjoy!

  • Substitute ground beef with ground turkey for a leaner dish.
