- 1 lb ground beef (or turkey)
- 3 large potatoes, sliced
- 2 cans kidney beans, undrained
- 1 can diced tomatoes (15 oz)
- 1 can cream of chicken soup (10.5 oz)
- 1 ½ cups shredded cheddar cheese
- 1 tsp Italian seasoning
- ½ tsp dried oregano
- 1 tsp salt
- ¼ tsp cracked black pepper
- Optional: chili powder, green chiles, corn
Instructions
- Slice the potatoes evenly and brown the ground beef in a skillet. Drain excess fat.
- In a slow cooker, layer the potatoes, ground beef, beans, diced tomatoes, and cream of chicken soup. Sprinkle with seasonings.
- Cover and cook on low for 8 hours or high for 4 hours.
- Sprinkle shredded cheddar cheese on top and cook for an additional 10 minutes until melted.
- Serve warm and enjoy!
