Soft, chewy cranberry cookies bursting with tart cranberries and sweet white chocolate chips, perfect for holidays or any occasion.
Ingredients
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– ½ cup brown sugar
– 2 large eggs
– 2 tsp vanilla extract
– 2 ½ cups all-purpose flour
– 1 tsp baking soda
– ½ tsp baking powder
– ½ tsp salt
– 1 cup dried cranberries (or 1 ½ cups fresh cranberries, chopped)
– 1 cup white chocolate chips (optional)
– ½ cup chopped pecans (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
3. Add eggs one at a time, then mix in vanilla extract.
4. Whisk together flour, baking soda, baking powder, and salt in a separate bowl.
5. Gradually add dry ingredients to the wet mixture until just combined.
6. Fold in cranberries, white chocolate chips, and pecans (if using).
7. Scoop dough onto baking sheet and bake for 10-12 minutes, until edges are golden.
8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
– Chill the dough for 30 minutes for a thicker cookie.
– Store in an airtight container for up to a week.
– Use fresh cranberries for a tart flavor or dried cranberries for added sweetness.
