– 2 lbs ground beef (or turkey/chicken) |
- 2 cups fresh spinach, finely chopped
- 3 cloves garlic, minced
- 8 oz mozzarella cheese, cubed
- 1 cup breadcrumbs (or almond flour for gluten-free)
- 2 eggs, beaten
- 1/4 cup milk
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 375°F (190°C).
- Finely chop spinach and mince garlic. Cube mozzarella cheese.
- In a large bowl, combine ground meat, spinach, garlic, breadcrumbs, eggs, milk, Parmesan, salt, and pepper. Mix well.
- Form the mixture into balls and stuff each with a cube of mozzarella. Seal tightly.
- Place on a greased baking sheet and bake for 20-25 minutes, or pan-fry until browned and cooked through.
Notes
- For gluten-free meatballs, use almond flour or pork rinds instead of breadcrumbs.
- Serve with marinara sauce, pasta, or as a meatball sub.
- Freeze uncooked meatballs for up to 3 months for meal prep.
