Description

Flavorful meatballs made with spinach and garlic, stuffed with creamy mozzarella cheese. Perfect for a comforting dinner, appetizers, or sandwiches.


Ingredients

– 2 lbs ground beef (or turkey/chicken)
  • 2 cups fresh spinach, finely chopped
  • 3 cloves garlic, minced
  • 8 oz mozzarella cheese, cubed
  • 1 cup breadcrumbs (or almond flour for gluten-free)
  • 2 eggs, beaten
  • 1/4 cup milk
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • 1. Preheat oven to 375°F (190°C).
  1. Finely chop spinach and mince garlic. Cube mozzarella cheese.
  2. In a large bowl, combine ground meat, spinach, garlic, breadcrumbs, eggs, milk, Parmesan, salt, and pepper. Mix well.
  3. Form the mixture into balls and stuff each with a cube of mozzarella. Seal tightly.
  4. Place on a greased baking sheet and bake for 20-25 minutes, or pan-fry until browned and cooked through.

Notes

  1.  For gluten-free meatballs, use almond flour or pork rinds instead of breadcrumbs.
  • Serve with marinara sauce, pasta, or as a meatball sub.
  • Freeze uncooked meatballs for up to 3 months for meal prep.
