Description

Ingredients

  • 1 small green cabbage, chopped
  • 2 carrots, diced
  • 1 medium onion, finely chopped
  • 2 celery ribs, sliced
  • 2 tablespoons olive oil
  • 2 (14.5-ounce) cans diced tomatoes
  • 4 cups vegetable broth
  • 2 Yukon Gold potatoes, diced
  • 1 (15.5-ounce) can white beans, drained and rinsed
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 8 minutes until softened.
  • Stir in garlic, thyme, and a pinch of salt. Cook for 1 minute until fragrant.
  • Add tomatoes, broth, cabbage, potatoes, and beans. Stir to combine.
  • Bring to a boil, then reduce heat and simmer for 25–30 minutes, until vegetables are tender.
  • Season with salt and pepper to taste. Garnish with parsley and serve hot.
