- 2 Yukon Gold potatoes, diced
- 1 (15.5-ounce) can white beans, drained and rinsed
- 4 garlic cloves, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 8 minutes until softened.
- Stir in garlic, thyme, and a pinch of salt. Cook for 1 minute until fragrant.
- Add tomatoes, broth, cabbage, potatoes, and beans. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes, until vegetables are tender.
- Season with salt and pepper to taste. Garnish with parsley and serve hot.
